How to make... …CUPCAKE DECORATIONS THESE CUPCAKES HAVE BEEN CREATED USING STENCILS. A SIMPLE YET EFFECTIVE TECHNIQUE ◆ ROLLING PIN ◆ RENSHAW SUGARPASTE IN BROWN AND WHITE ◆ STENCIL (SCRUMPTIOUS STENCILS™) ◆ PAINT BRUSH ◆ SILK LUSTRE POWDERS (RAINBOW DUST: PEARL PACIFIC BLUE) ◆ CUTTING WHEEL OR KNIFE ◆ MOULD ◆ METALLIC FOOD PAINT (RAINBOW DUST: BABY BLUE) ◆ PREPARED CUPCAKES 3 Carefully peel away the stencil to reveal the painted designs on the sugarpaste. 6 Use a suitably sized cutter for your prepared cupcakes and cut into your strip design. Using a palette knife, carefully lift paste into position on your cupcake. Adjust strips if necessary by gently squeezing edges inwards with cupped hands. 1 Roll your sugarpaste to about 5-6mm thick. Place the stencil over the sugarpaste and roll over it to embed the stencil into the surface of the paste, creating a slightly raised pattern. 4 Mark desired width of strips, then use a cutting wheel or knife to cut several strips of decorated paste. 7 Choose a complementary silicone mould design, create the embellishments by dusting the inside of the mould with a small amount of icing sugar. Take a small amount of sugar paste, push it into the mould, making sure that you don’t over ﬁll the shape. When set, remove the embellishment from the mould and paint with an edible metallic paint. 2 Leaving the stencil on the paste, pick up a small amount of lustre dust onto a dry paint brush and apply the lustre dust in small circular movements, working on a small area at a time. Continue until all loose dust is worked into the design and the raised area is covered. 5 Take a second colour of sugarpaste and roll it to the same thickness as your decorated strips. Cut it to the desired width. Then position the plain strip between the two decorated strips. Apply edible glue sparingly on the joining edges. 8 Position your moulded shapes onto the ﬁnished cupcake using edible glue.
