rich water just out of Salcombe
estuary and beyond into the
English Channel.
Crabbing season starts in April
running through to
November. In the
winter, the male
crab sets up home
in anticipation of
mating, so you
can still expect
to find crab on
the menu. Favis
works off the

'Emma Jane', a 60ft crabber that
can go to sea for up to six days
on end. On a good day, their haul
is anything up to 20 tonnes. As
an average crab weighs around
800g, that's a lot of crab!

None wasted

By contrast, The
Salcombe Fishwife is
a smaller operation.
They work off 32ft
boats within three
miles of the harbour;
if they haul in one
tonne, it's more then
enough for their
business which also
encompasses wet
fish. In general,

TOP FISHY TIPS

Prefer the white meat? Go for a
male crab. If you prefer brown
then buy a female.

For the best fish, don't be afraid
of slime - it's the best way to
ensure you're buying super fresh
fish, along with bright sparkly eyes.
If it's soft to touch and smelly, then
chances are it's way past its best.

Want to cook your own crab?
Steam it for 40 minutes before
plunging into ice cold water.
Boiling takes on too much water
and makes it too wet. Steam keeps
it dryer and therefore sweeter.

The best crab should be
delicate, sweet and dry.
