Springtime snacks
SPEEDY SPRING LAMB STEW
Serves 4-6
2 tbsp olive oil
700g lamb shoulder, meat cut into cubes
Salt and black pepper
4 carrots, peeled and thickly sliced
1 onion, sliced
1 tbsp flour
120ml white wine
500ml chicken stock
1 x 400g tin of chopped tomatoes
200g green beans, roughly chopped
A handful of fresh parsley, chopped
To serve:
Boiled new potatoes
1 Heat half of the oil in a large saucepan over a medium-high heat. Season the lamb with salt and pepper and cook, turning occasionally for about eight minutes. Transfer to a plate and set aside.
2 Add the carrots, onion and the remaining oil to the saucepan. Cook for 3-4 minutes until they begin to soften, then stir in the flour and cook for one more minute.
3 Stir in the wine and scrape up any brown bits from the bottom with a wooden spoon.
4 Add the chicken stock, tomatoes and beans. Simmer for 8-10 minutes until tender. Stir in the lamb, parsley and a generous pinch of salt and pepper. Serve immediately with new potatoes.

LEMON SHORTCAKES
Serves 8
800g mixed berries
120g sugar
300g flour
½ tsp baking powder
½ tsp bicarbonate of soda
¼ tsp salt
130 g cold butter, cut into pieces
100ml milk, plus extra to brush
Zest and juice of 1 lemon
240ml double cream
1 Toss the berries with half of the sugar. Cover and refrigerate until needed.
2 Preheat the oven to 180 C/160 C fan/gas mark 4. Sift the flour, baking powder, bicarbonate of soda, salt and remaining sugar into a bowl.
3 Add the butter and crumble it into the mixture with your fingers until it resembles coarse crumbs.
4 Whisk the milk, lemon zest and lemon juice in a small bowl, then stir into the flour mixture just until moistened.
5 Turn the dough out onto a floured surface and pat into a 3cm-thick round. Use a cookie cutter to cut out rounds from the dough. Place onto a baking sheet and brush the tops with milk. Bake for 11-14 minutes until golden brown.
6 Whip the cream until soft peaks form. Place a scone into a shallow bowl and top with some whipped cream and the berries to serve.

This is a concert dedicated to the genius of Nelson Riddle and Billy May taking place in the National Concert Hall on Sunday March 23rd. Both are considered by many as the greatest arrangers and composers in the history of American popular music. They will forever be linked with the music of famous vocalists such as Frank Sinatra, Ella Fitzgerald, Nat King Cole, Peggy Lee, Dean Martin, Rosemary Clooney, Linda Ronstadt and dozens of others.
Both composers arranged the soundtracks of many Hollywood movies and Nelson was nominated for seven Academy Awards, winning twice. Each of them had their own orchestras and wrote in each others style to fulfil contracts for each other when they were too busy.
