FESTIVE TREATS

Christmas Cherry Muffins

Serves 8

100g butter, melted
100g plain flour
½ tsp baking powder
2 tsp mixed spice
100g dark muscovado sugar
2 eggs
Zest of 2 oranges, finely grated
200g cherries, de-stoned and halved

To serve: Vanilla ice cream

1 Grease and flour eight small ramekins and set aside.

2 Add the butter, flour, baking powder, mixed spice, sugar, eggs and orange zest into a large bowl.

3 Using a hand blender, blend until completely combined.

4 Add the cherries and stir to mix together.

5 Cover the cake mix with clingfilm and place in the fridge for 10-15 minutes, until needed.

6 Heat the oven to 230°C/gas mark 8.

7 Remove the mixture from the fridge and divide it between the ramekins.

8 Place the ramekins on a baking tray and put in the oven to bake for 15 minutes until puffed up and golden. Serve with vanilla ice cream.

Last-Minute Christmas Pudding

Serves 8

300g mincemeat
140g orange marmalade
200g dark brown sugar
4 tbsp treacle
3 eggs, beaten
4 tbsp whiskey
100g butter, frozen and grated
200g self-raising flour

To serve: Brandy butter Cream

1 Butter a 1.5-litre plastic pudding basin. In a large bowl, stir together all the ingredients until completely mixed.

2 Pour the pudding mixture into the basin and cover with a circle of parchment paper. Place the pudding on a plate and microwave for 20-25 minutes until a skewer inserted into the centre comes out clean.

3 Leave to stand for five minutes, then turn out and serve with brandy butter and cream.
