Healthy dining

TOFFEE CHEESECAKE CUPS
Makes 16

8 Digestive biscuits, crushed
20g unsalted butter, melted
1½ tbsp sugar
450g cream cheese, at room temperature
Salt

For the filling:

150g sugar
Salt
½ tsp vanilla extract
2 eggs
60g toffee dessert sauce

1 Preheat the oven to 165°C/145°C fan/gas mark 3 and line two 12-cup muffin tins with paper liners. Stir together the Digestive crumbs, butter, sugar and a pinch of salt.

2 Press a spoonful of the mixture into the bottom of each lined cup. Bake for five minutes.

3 For the filling, beat the cream cheese with an electric mixer until fluffy. Gradually add the sugar with the mixer on low speed.

4 Add a pinch of salt, the vanilla and the eggs, beating well between each addition. Stir in 45g of the toffee sauce.

5 Spoon three tablespoons of filling into each lined muffin cup and add a spall bit of the remaining toffee sauce to the top of each. Use a toothpick or skewer to swirl the sauce into the batter.

6 Bake 22-25 minutes, rotating the pans halfway through, until the filling is set. Remove from the oven to cool completely, then chill in the refrigerator for at least four hours before serving.

INDIAN CHICKEN AND CAULIFLOWER PILAF
Serves 4

2 tbsp vegetable oil
350g chicken fillets, diced
1 onion, finely chopped
350g basmati rice
1 tsp ground turmeric
550ml chicken stock
350g cauliflower, cut into small florets
200g frozen peas

A large handful of cashews, roasted

A handful of coriander leaves, chopped

To serve: Natural Greek yoghurt

1 Heat oil in a large saucepan over a medium high heat. Cook the chicken for 2-3 minutes until browned. Transfer to a bowl.

2 Reduce the heat and add the onion to the pan. Cook for three minutes until softened.

3 Add the rice and turmeric. Cook, stirring, for 30 seconds or until fragrant.

4 Add the stock, cauliflower and chicken and bring to the boil. Reduce the heat to medium-low and cook, covered, for 10 minutes or until the rice is almost tender.

5 Add the peas and cook for another three minutes until the stock is absorbed. Remove from the heat and allow to stand for five minutes.

6 Stir in half of the cashews and coriander. Spoon into bowls and top with the remaining cashews and coriander. Serve warm with yoghurt.
