* 2 garlic cloves
* A thumb of ginger
* 1 chilli
* A handful of basil leaves
* A handful of fresh coriander
* Zest of 1 lime
* 2 shallots
* Salt and pepper
* 1tbsp coconut oil
* 1 litre boiling water
* 1 vegetable stock cube
* 1 pak choi
* 1 carrot
* 1 courgette
* 200g small heirloom tomatoes
* 250g Thai rice noodles
1. In a food processor, blitz together
garlic, ginger, chilli, basil leaves and
fresh coriander, lime zest, shallots, and
a good pinch of salt and pepper.

FOOD HACKS TO MAKE YOU FALL IN LOVE WITH VEG

Do the
twist

Roll cooked
corn on the
cobs in melted
butter and
then in a mix
of grated
Parmesan, chilli
flakes and
basil for a
unique twist
on a barbecue
favourite.

Liven up
your greens

Toss French or
runner beans
with a little oil
and salt. Grill
until charred
and crackling.
Sprinkle with
sesame seeds
to serve
either as a
snack or a
side dish.

Sweet and
sour veg

Pickle red
onion in a mix
of lemon, lime
or orange juice,
a little salt and
sugar for 10-15
mins. Great
with grills,
roasts, tacos, in
noodle soups...
with everything
really!

Pretty and
colourful

Use a veg
peeler to make
ribbons out
of carrots,
courgettes
and butternut
squash for a
raw veggie
alternative to
pasta, or toss
into a salad for
rainbow eating.

Charred
delight

Griddle spring
onions in a
hot pan (no
need for oil)
till soft and
charred. Slice
into chunks and
dip in romesco
sauce or garlic
aioli, or serve
on the side
of roasts.

2. Warm the coconut oil in a large pan
over a medium-low heat. Scrape in the
chilli paste and fry for 5 mins. Pour in
the boiling water. Add the stock cube.
Simmer for 10 mins. Meanwhile, shred
and chop the pak choi.
3. Peel the carrot and courgette into
ribbons. Halve the tomatoes. When
the broth has cooked for 10 mins,
add the pak choi, noodles and tomatoes.
Cook for 3 mins and add the carrot and
courgette. Squeeze in lime juice then
simmer for 2 mins. Serve scattered with
a few more basil and coriander leaves.
