MEXICAN
MARVEL

Real comfort food that's sweet, salty
and satisfying.
Serves 1
Prep: 10 mins

Cook: 25 mins
Total: 30 mins

* 1 small sweet potato
* 1 small beetroot
* ½ onion
* A knob of butter
* Salt and pepper
* 2 eggs
* A little feta
* A pinch of chilli flakes
* Chopped flat leaf parsley to serve
1. Scrub and coarsely grate the sweet
potato and scrub and trim the ends
off the beetroot. Coarsely grate it to
match the sweet potato. Peel and
finely chop half an onion.
2. Set a deep frying pan over a
medium heat. Drop in a knob of
butter. Add the veg. Season with salt
and pepper, cover with a lid (or use a
baking tray if you don't have a lid)
and gently fry for 20 mins, stirring
every so often, till soft.

BEETROOT & SWE ET
POTATO HASH

3. Crack in 2 eggs. Pop the lid back
on. Cook for 3-5 mins till it's set to
your liking. Crumble over a little
feta, a pinch of chilli flakes and some
chopped flat leaf parsley to serve.

CRUNCHY CAULI TACOS
WITH SMASHED AVOCADO
A smashingly simple and delicious dish.
Serves 2
Prep: 15 mins

Cook: 30 mins
Total: 35 mins

* 4 small soft tortillas
* 1 medium cauliflower
* 1tbsp olive oil
* 1tsp smoked paprika
* 1tsp cumin seeds
* A pinch of chilli powder
* Salt and pepper
* 1 avocado
* 1 lime
* A handful of lettuce leaves
* 1 small carrot
* A few coriander leaves
1. Remove the wire rack from your oven.
Heat your oven to 200°C/Fan 180°C/Gas 6.

2. Lay the tortillas over two bars of the
wire rack. Most of the wrap should hang
down through the bars to make scoops.
Slide the shelf in the oven and bake for
5 mins till golden and crisp. Set aside.
3. Break the cauliflower into small
florets. Pop them in a bowl and add olive
oil, smoked paprika and cumin seeds, a
pinch of chilli powder, salt and pepper.
Tumble onto a baking tray and roast for
20-25 mins till golden brown.
4. While the cauliflower roasts, scoop
the flesh of the avocado onto a plate and
squeeze over the lime juice. Mash with
the back of a fork. Shred a handful of
crunchy lettuce leaves. Peel and coarsely
grate a carrot. Fill in the crisp taco shells
with the shredded vegetables, cauliflower,
avocado and a few coriander leaves.
