Michael Isted

Phytotherapist and author
of The Herball's Guide to
Botanical Drinks, Michael
gives us his simple recipe for
strawberry infused wine

DID YOU KNOW?

Strawberries contain vitamins C and
K plus a good dose of fibre, folic
acid, manganese and potassium.
TOP TIP Look out for wild
strawberries growing in the nooks
and crannies of gardens or between
paving stones. They're tiny yet
flavoursome and aromatic.

"Chop a couple of
handfuls of strawberries
and place in a container
with a lid or large tea pot.
Pour 500-600ml of boiling
water over to make an
infusion and press the
strawberries with the back
of a spoon to extract a
little more flavour. Leave
the lid on and allow to
cool. Once cold, place in
the fridge to chill. Pour
through a tea strainer into
a glass full of ice, add a
teaspoon of rose water and
top with sparkling wine
(or  sparkling water).

Pastry chef and author of
The Natural Baker, Henrietta
shares her love of rhubarb

"I love garden rhubarb.
At this time of year, it's
both flavoursome and
adaptable. Bake it with
a little brown or coconut
sugar or honey, orange
zest and juice and you've
got a great compote to
have anytime. Eat it
with yogurt, or served
alongside a sponge cake
or biscuits as a simple
and delicious pudding,
or use baked rhubarb in
tarts as a filling on top of
frangipane, fold it into
cake mixes or add it to
oaty muffins."

DID YOU KNOW?

Rhubarb is rich in
calcium, lutein (to boost
skin and eye health) and
vitamin K, a nutrient
which helps form blood
clots when you are
injured. It also boasts
numerous diseasefighting antioxidants.
TOP TIP Rhubarb freezes
well, so you can make it
last all summer.

HOW TO ASK FOR (AND GET!) FLEXITIME

3.

4.

5.

First thing's first:
you need to ask
what options are
currently available
for you to work
remotely. Your
company may
already have a
policy in place
for flexible
hours, but you
need to check.

For your application
to be seriously
considered, you
must submit an
email or letter
dated and labelled
'statutory request'.
Follow the formal
process by filling
out the right to
flexible working
form via gov.uk.

Talk to your
manager and agree
a plan for flexible
working. You should
have evidence of
how you plan to
submit work or
attend meetings.
It's important to
outline the details
early on to avoid
miscommunication.

You need to
prove altering
your schedule
won't affect the
quality of your
work. The last
thing you want is
your boss to think
you need to
escape, or can't
cope with your
current workload.

If you want your
company to sign off
on it, you need
to highlight the
positives and show
your manager how
working flexibly will
improve your
productivity.
Then, your request
is more likely to
be approved.
