'Enclosing it in a parcel then baking
it is a really easy way to cook seafood,
and you can add a portion of pasta
(cooked al dente) to the parcel if you
want to make it even more filling.'

Brunch
treat

You will need:
* 200g mix of frozen, raw fruits de
mer, defrosted (or fresh, if you can
source them)
* 5 cherry tomatoes, halved
* 1 small fresh green chilli,
finely chopped
* 1 tinned anchovy (in oil),
finely chopped
* 1-2 garlic cloves, finely chopped
* 1-2 sprigs of flat-leaf parsley leaves,
roughly chopped, plus extra to serve
* 2 thin slices of unwaxed lemon
* A splash of white or red wine,
or vermouth/sherry (optional)
* Sea salt; freshly ground black pepper
* Slice of bread, to serve
1. Preheat oven to 220°C/gas mark 7.
2. Combine all the ingredients
(except the seasoning and bread)
in a medium bowl, so they mix
together well. Season with salt and
pepper and mix again. If you have
wine, vermouth or sherry handy,
add a splash for extra acidity and
depth of flavour. Scoop the mixture
carefully into the parcel and seal
sides of the parcel so it's airtight.

KIMCHI PANCAKES
'I love the manifold flavours of this
dish, adapted from a recipe by my
friend Judy Joo, the brilliant KoreanAmerican chef.'
You will need:
For the dipping sauce
* 2tbsp soy sauce
* 1tbsp mirin (or white wine vinegar)
* 1tbsp toasted sesame oil
* 1tbsp toasted sesame seeds
* 1tsp soft light brown sugar
* 1tsp Korean or Aleppo chilli flakes
(or 1 green chilli, finely chopped)
* 1 spring onion, thinly sliced on diagonal
* Sea salt; freshly ground black pepper
For the pancake batter
* 150g kimchi, drained and roughly
chopped (plus 2tbsp of the liquid)
* 60g rice flour
* 2tbsp plain flour

* 2 spring onions, thinly sliced
* 1 egg
* 1tsp soft light brown sugar
* 1 garlic clove, finely grated or chopped
* A pinch of sea salt
* Vegetable or sunflower oil, for frying
1. Combine all the dipping sauce
ingredients in a bowl. Season to
taste with salt and pepper. Set aside.
2. Mix batter ingredients (except the
oil) in a medium bowl until you have
a thick, lumpy batter.
3. Heat 2tbsps of oil in a skillet,
frying pan or crêpe pan over a
medium heat and pour in a little
batter to make 2 pancakes. Fry
for 2-3 minutes, then flip over to
cook for 2-3 minutes on other side.
Remove from pan and continue with
the remaining batter. You should
get six in total. Serve warm with the
dipping sauce.

4. Remove from the oven, carefully
open the parcel and sprinkle a
little extra fresh parsley on top.
Scoff the lot with a slice of bread
to mop up all the juices.
