COURGETTE, LEMON
AND BASIL PASTA
'Here's a quick vegetarian pasta
dish that can easily be adapted to
other greens: try it with asparagus,
broccoli or broad beans when you
tire of courgette.'
You will need:
* 100g spaghetti or linguine (or
pasta of choice)
* 2tbsp olive oil
* 1 banana shallot or 2-3 smaller
shallots, finely chopped
* 1 garlic clove, finely chopped
* A pinch of chilli flakes
* 1 courgette, roughly grated
or chopped
* Leaves from a few sprigs of basil
* Grated zest and juice of ½ small
unwaxed lemon
* Sea salt and freshly ground
black pepper
* Parmesan cheese, grated, to serve
* 2tbsp pine nuts, toasted, to serve
1. Bring a medium saucepan
of salted water to the boil and
cook the pasta according to the
packet instructions.
2. Meanwhile, heat half the olive
oil in a separate skillet or frying
pan over a low to medium heat,
add the shallot and fry for about
5 minutes until soft; then add
the garlic and chilli flakes and
fry for a further minute. Add the
remaining olive oil, tip in the
courgette, season with salt and
pepper and cook for a further 1-2
minutes, just long enough for the
courgette to absorb some of the
flavour from the garlic, shallot
and chilli. Switch off the heat,
add the basil leaves and allow
the basil to wilt slightly before
adding the lemon zest and juice.

3. Drain the pasta and, if the
skillet or frying pan is large
enough to hold the spaghetti or
linguine, add it while it's draining
so you get a little of the pasta
water mixing with the courgette.
Otherwise, add the courgette
mixture to the pasta pan after
you've drained the pasta. Stir
through and serve hot, with lots
of grated Parmesan and the pine
nuts scattered on top.
