efore you can even begin
to muddle or mix, shake
or stir, you will need
to invest in a few
indispensable pieces
of classic cocktail kit:
a shaker; mixing
glass; strainer; muddling
spoon; and spirit
measure.

improvise and your
kitchen cupboards will almost certainly
contain everything you need:
❋ Shaker - you may look the part
with a proper cocktail shaker, but a
glass jar with a reliable screw top lid
does the job just as well.
❋ Mixing glass - if you have a
cocktail shaker, then simply utilise
its base. Otherwise, a glass or Pyrex
jug is fine... and you can even turn a
vase into a mixing glass (as long as it
is squeaky clean!).
❋ Strainer - any fine-meshed kitchen
sieve or colander and even the
humble tea strainer will work.
❋ Muddling spoon - a teaspoon, a
pestle or a wooden spoon can be
put into service here.

❋ Spirit measure - if you have a
bread-maker, then you will also
possess a small measuring jug that
is ideal for cocktail-making purposes.
Alternatively, note that a tablespoon
of liquid is roughly equivalent to 1cl.
Planning ahead
Place glasses in the
freezer at least half an
hour before you need
them because they
should be icy-cold. It
is also expedient to
prepare garnishes in
advance. Ensure that
you have plenty of ice.

Any recipe containing juice, cream
or egg white needs to be shaken.
With one hand firmly on the top of
the shaker, shake vigorously for
around 20 seconds. Many ingredients
mix easily and therefore don't have
to be shaken. In this instance,
cocktails are 'built' before
being strained into
the glass.
Muddling means
mashing fruit or
herbs in the bottom
of the glass. Try not
to squash the fruit or
